dash of salt
1/2 tsp. vanilla
3 ripe bananas
1 cup of rolled oats
1 cup of chopped dates
1 cup of raisins
1 cup of any other dried fruit you like
optional: 1/2 cup chopped walnuts and 1/2 cup chocolate chips
Preheat oven to 350 F. In a large mixing bowl, combine all of the above ingredients thoroughly. Place about a teaspoon of the cookie mixture in your hands and compress tightly into a cookie shape. Make it slightly flat on top. These cookies do not spread as they bake, so you may place them close together onto a non-stick cookie sheet. Continue like that until you have used all of the cookie mixture.
Bake for 25 minutes on the center rack. Allow the cookies to cool. Serve and enjoy! These cookies freeze extremely well. You can take them out and warm them up any time you want a yummy snack.
